A series of conversations about love  for a Valentine's day special

Love is a complex and beautiful emotion that takes many forms. On Valentine's Day, we take a moment to celebrate the different types of love that bring joy and fulfillment to our lives. To celebrate this special occasion, we spoke with different inspiring women from our community to learn about their passions and the love they have for them.

Marcela Rojas is a Mexican chef who has a passion for food like no other. With years of experience in the culinary industry Marcela has brought traditional Mexican cuisine to The Netherlands.  This post is about Marcela's  love  for food and find out what inspires and drives her to create delicious and authentic dishes. Get ready for an intimate and mouth-watering post!

Born and raised in Mexico City, Marcela learned to cook at a young age from her mother and grandmother Rosita, who instilled in her a deep appreciation for the flavors, techniques, and ingredients of Mexican cuisine.  Marcela's love for food started at a young age, in the kitchen of her grandmother Rosita. She was fascinated by how different ingredients could be combined to create rich flavors, which felt like magic to her. This early experience in the kitchen with her grandmother likely played a role in shaping Marcela's passion and love for cooking.

Marcela moved to Italy 23 years ago and was fortunate enough to learn the secrets of Italian cuisine from her husband's grandmother, Nonna Irene.  Marcela was captivated by the flavors and ingredients used in traditional Italian dishes and soon fall in love with Italian Cuisine. However, she never forgot her Mexican roots and the delicious food she grew up eating.   When we asked which food she prefers, Mexican or Italian?    She told us... Both Mexican and Italian food holds a special place in Marcela's heart and it is difficult for her to choose between the two.

She believes that each cuisine has its own unique character and offers something different to the table. She says that just like when you love your children, you love both Mexican and Italian food for their own individual qualities and attributes.

Marcela's favorite traditional dish is Fideos (noodles) soup. The dish holds a special place in her heart because it reminds her of her mother and grandmother and the love and care they showed her by cooking this soup for her. It makes her feel at home and loved.

Marcela is the proud owner of El Metate, a beautiful food truck hand painted with the iconic image of Frida Kahlo.  She loves her food truck  as it gives her the opportunity to travel and spread both her authentic Mexican cuisine and cultural heritage. The food truck has become more than just a business for her; it is a way to preserve her culture and share it with others. She takes pride in every dish she serves, putting her heart and soul into each recipe. The food is a deep reflection of her  family's traditions and the culture that she holds so dear. She loves when Mexicans come to her truck and are able to feel at home for a moment.  Every day, Marcela is grateful for the opportunity to do what she loves while sharing her heritage with others.

Finally we asked Marcela how she is going to celebrate Valentine's day, and she told ius with a delicious dinner of course!! She will prepare a pink Mole.
